Apple Ciders are a traditional way to indulge in the seasons flavors while celebrating with friends and family. Northern France is where the drink began because of their volume and quality of orchards. In the 18th centuries the drink started to become so popular that those who worked on the properties would ask to receive their wages in cider. They were rated by the amount they could drink. A ¨two gallon man¨ was worth the extra he drank!
The process of making cider begins with the Cider Mill taking the sorted and graded apples from various orchards and extracting their juice. They then take the liquid to the Vas House where yeast is introduced and fermentation begins. Next, transferred to a maturation vessel. Once ready, the juice is sent through a series of filters then pasteurized to be ready for packaging. Traditionally the drink is flat, but to meet recent consumer preference carbonation is added.

- 1/4 gallon apple cider
- 1/2 cup dark rum
- 1/2 cup cinnamon schnapps
- 1 Granny Smith apple peeled and cut in chunks
- 1/2 lemon, juiced
Mix apple cider, rum, and schnapps in a pitcher. In a separate bowl toss apples in lemon juice and skewer to use as garnish. Serve over ice or shake and strain for a martini. Serves 4-6
